How to be on top of everything
Short answer: you can't, and once you accept that you actually start doing better.
We all want to stay on top of everything, every project and every side idea and every new framework that looks worth learning, but I've tried it plenty of times and it never works because your attention doesn't really split, it just spreads thin until nothing gets finished.
What changed with AI
For a long time the hard part was doing the work, writing the code and figuring out the path and getting something to actually run, but that's not the bottleneck anymore now that AI will scaffold a project, write a first draft of the code and sketch out a plan in a couple of minutes.
So now we start everything, ten tabs and ten repos and ten half-built ideas, because starting has never been this cheap. Finishing is a different story, since it's just as hard as it always was, and if anything it feels worse now that there's so much more sitting half done.
What actually works
Do one thing at a time: pick something, take it all the way to done, and only then move to the next one. It feels slower but it isn't, because ten things at 80 percent are worth nothing when you can't ship them and they just sit in the back of your head taking up space, whereas one thing finished beats all of them.
The skill worth building right now isn't starting things, it's finishing them.
